Last night’s very special, most dramatic, unprecedented episode of “The Bachelor: The Women Tell All” required a very special, unprecedented dinner.
I’d been meaning to do an at-home pizza & salad night for a while, and Juan Pablo facing the firing squad of rejected suitors was pretty much the PERFECT reason to buy another Against the Grain gluten-free pizza crust AND try to recreate one of my favorite restaurant dishes here in my new home state:
The White Bean and Arugula Salad from Wolfgang Puck’s Pizza Kitchen.
Last night was my first attempt at recreating one this amazing salad from one of my new go-to spots here in NC. I’ve got no shame in admitting that if I’m alone for dinner, I love sitting at the bar with this salad and a glass of Nero d’Avola for dinner.
There was only one tiny problem with my recipe re-creation:
I had everything BUT the arugula. [Oh, #Fail]
No big deal. I just channeled Juan Pablo and said,
“You know what? Eeets O-KAY. Eeets O-KAY!“
Thank goodness a bag of baby spinach made a decent, last minute stand-in!
I’ve never had a salad (or anything really) at Wolfgang Puck Pizza Kitchen that isn’t fantastic, but this is the one thing I crave and HAD to recreate because I’m tired of driving half-way across town for it!
I swapped out the restaurant’s lemon vinaigrette for a red wine one, but you know what, I think I got it pretty darn close:)
I love this ridiculous show and have watched every season but the first one:) I may love to WATCH a guilty pleasure show like “The Bachelor” – but that doesn’t mean I have to feel guilty about my viewing party dinner!
One bonus of making it at home is that I can add as many pickled peperoncinis as I want, AND stand in the kitchen and eat them out of the jar while watching “The Bachelor.”
White Bean and Arugula Salad
5 packed cups of arugula
1/2 c. cannellini beans, drained and rinsed
1/3 c. pickled peperoncini peppers, drained and sliced (like these)
2 oz. thinly-sliced prosciutto or 2 slices of bacon, crisped and chopped
Ricotta salata or grated parmesan, to taste
Combine all ingredients in a large bowl and toss to combine.
Drizzle Red Wine Vinaigrette (recipe below) around the edges of the bowl and toss with tongs until arugula is lightly dressed.
Sprinkle with cheese and serve.
