Banana-Ginger Protein Pancakes

Did you eat too much sugar, too many carbs, or just much too much in general?

After OD’ing on sugar, I’m still craving light, simple, clean food, and these fit the bill this morning. ¬†They are very mildly-flavored, but feel free to punch it up with extra ginger or extra banana if you’re in the mood for that sort of thing!

INGREDIENTS

1/2 c Gluten-free oat flour
1 Tbs coconut flour
1/2 tsp baking powder
1/2 tsp cinnamon
1/4 tsp ground ginger (or more if you like ginger like I do!)
pinch of salt
1/2 c egg whites
1/2 c Fage 0% Greek yogurt
1-2 oz mashed banana
1/2 tsp vanilla extract

DIRECTIONS

Combine all dry ingredients in good processor and blend well.

Add wet ingredients and blend until batter is smooth.

Pour into lightly-greased preheated skillet and cook until bubbles appear on surface. Flip and cook until golden brown and set, about a minute more.

Top with warm blueberry compote or your favorite healthy pancake topping.
